Ladurée, Sydney

One of the higher end HSC study snacks: macarons. I've heard many amazing stories about the original Ladurée store in Paris so cue me jumping around like a squirrel on crack for these.

Adriano Zumbo at The Star, Pyrmont

I love Willy Wonka so standing outside AZ is like looking into a modern version of the chocolate factory from the book. Not to mention you might be able to learn a couple of things just from observing. The super bright colors are in total contrast to the darkness that is Momofuku Seiobo opposite. The wait is pretty long though (I waited about 1 hour for the dessert train).

(Sort Of) International Macaron Day


Yes I'm well aware that Zumboron Day (aka Macaron Day Sydney) is in November, but when international cities like Toronto, Vancouver, Paris, New York are celebrating on March 20, we can all fit in that extra macaron in our stomachs!

Macarons: Still Can't Get It Right



Probably the 10th time I've made them, and I'm still no closer to making them look like Pierre Hermé's... Darn you almond meal! I will persist until you're as pretty as can be!

168 Macarons


1.950kg pure icing sugar + 780g almond meal + 18 egg whites + 360g caster sugar + 6 drops pink food coloring + 510g unsalted butter = 168 macarons. Recipe: here.

(Recipe) Making Macarons


Just a short post to start off with! So here's a  visual of when I had a go at making macaron shells. (Step by Step)
Ingredients:
- 60g caster sugar
- 230g icing sugar
- 135g almond meal
- 1 fresh egg white
- 2 old egg whites (egg whites that've been left in the fridge for at least 1 day)
Preheat the oven to 120°C. Measure out the ingredients. Be extremely careful!
